Ripening

THE SECRET OF TIME

While ripening, the wheels of cheese are constantly turned half way round and brushed every fifteen days. At the end of month number nine of moulding, the cheese is subjected to a meticulous evaluation process, known as «espertizzazione», by an experienced member of our staff duly trained to perform this task. These experts certify if the cheese is in compliance with all of the standards set forth in the Production Specifications.

All wheels that pass the test are fire branded with the typical diamond-shaped lozenges and the words 'Grana Padano', which certifies the quality of the cheese and its official 'Grana Padano PDO' status.

The packaging of Grana Padano PDO sold in portions or grated should also bear the famous black lozenge trademark on a yellow background- after being duly authorised by the Protection Consortium. This is to certify that the cheese inside the packs has been fire branded and so can legitimately carry the label 'Grana Padano PDO'.
