Processing

EXPERIENCE AND CARE

After many years of experience in making ripened cheeses, Cooprolama also makes Gran Maddalena now, a cheese obtained from raw milk of four daily milkings.

Equal parts of naturally skimmed milk and whole milk are processed in copper kettles in order to obtain a product with fine organoleptic qualities.

Gran Maddalena is made using milk supplied by partners and shareholders; the supply chain is certified to UNI EN ISO 22005:2008 'Traceability in the feed and food chain'.

Cheese wheels are ripened inside conditioned warehouses for at least 12 months, and during this period they are turned and brushed weekly.
